Plantains are much starchier, less sweet.

I've always seen plantains with green skins. I've eaten a million of them either boiled in stew (like dumplings) or smashed and fried. The fried sweet plantains you can get at Cuban/Jamaican restaurants are great.

When I first moved to Florida, I had what I thought were bananas growing in my backyard, and thought, "How cool is that?". Liking my bananas on the green side, I picked a yellowish-green one and took a bite. There's not enough water in the world to staunch the dryness that comes from biting into an unripe plantain. I later learned that they are quite tasty when ripe and subsequently fried or sauteed. But it's so much less hassle to get them already prepared at the local Cuban market, so I tore them out and planted proper bananas.

I miss the mofongo since we moved from the heights. You can get mofongo with a side of tostones and maduros for dessert!

Some variation but you want green for tostones, yellow with black bruises for maduros.
